1 cup wheat berries
2 tablespoons honey
Simmer 2 hours. Add honey after cooking. | June 3, 2006 | Category : Bread (2) | Title : Blender Pancakes or Waffles (1) | | | | | Bread | Presoak for at least 7 hours or overnight:
1/2 C rolled oatmeal 1 C pastry berries 1 1/2 C kefir, sour milk or butter milk
After soaking put berries in the blender and add:
1 egg 2 T coconut oil 1 t vanilla 2 T honey or Agave 1 t salt
Blend until smooth. You may need to add extra liquid if a vortex does not form in your blender.
Stir in;
1/2 t baking soda 2 t baking powder
Proceed as you normally would to make pancakes or waffles.
Note: You can use any combination of grains as long as you have 1 1/2 C. Try brown rice, any type of wheat, buckwheat, hulled barley, whole corn, or quinoa. | Oct 8, 2005 | Title : Whole Grain Blender Banana Bread (1) | | | | | Bread | Pre-soak for 7 hours or over night: 1 1/3 C pastry berries in 3/4 C of kefir and cover (you could substitute yogurt, sour milk or buttermilk for kefir). Leave this mixture on the counter, no need to refrigerate. If you get busy you can refrigerate the mix and use it a day or two later if you need too.
After soaking put the berrries and kefir into a blender that can crush ice. I use a Vitamixer. You can do the presoak directly in the blender if you wish.
Add 1/2 C honey 1/4 C softened butter 2 eggs 1 t vanilla 1/2 t cinnamon 3 bananas (1 1/2 C) 1/2 t sea salt
Blend until smooth. You may need to add more liquid to this step. You need to see a vortex in the batter or it won't blend properly. You may add kefir, plain milk, butter milk. You may even be able to use fruit juice although I haven't tried that yet. Blending may take 1 to 3 minutes depending on your blender. I blend mine until it starts to get warm in the Vitamixer.
When the mixer is smooth add and stir in with a narrow spatula:
1/2 t of baking soda 1 1/2 t of baking powder
Preheat oven to 350. Bake in a well greased/floured pan for 1 hour. Cool in the pan for 10 - 20 minutes. Then finish cooling on a wire rack. | Oct 8, 2005 | Category : Cheese (1) | Title : Ricotta (1) | | | | Annelis Johnson | Cheese | What you will need: Stainless Steel pan Citric acid Salt Cheese cloth Milk Stirring spoon Storage container
1. Place 1 to 1 ½ gal of milk in stainless steel pan. 2. Add 1 ½ tsp citric acid per gal of milk(you may have to add more when using fresh milk); add 1 tsp salt per gal of milk. 3. Slowly heat milk to about 120F stirring constantly to avoid scorching. (the correct way is to heat to 195F but it kills everything in the milk so I force it to separate by adding more citric acid at 120F) 4. As soon as the curd separates from the whey, pour into cheese cloth and hang for up to an hour. The longer it hangs the dryer the cheese. 5. Salt and put in container. Ricotta freezes great but will stay fresh(if salted) in the fridge for up to 3 weeks.
| Oct 8, 2005 | Category : Coconut (14) | Title : Breaded Chicken Breasts* (with a few changes) (1) | | | | Dawn & Adrian Mabry | Coconut | Page 284 of Nourishing Traditions (with a few changes)
8 skinless chicken breasts
1 1/2 cup unbleached flour *(I use stoneground whole wheat)
1 tsp pepper
4 eggs beaten
2 cups whole grain bread crumbs

Trim chicken breasts and pound lightly with the small prong side of a meat hammer. Using tongs dip each piece first in the flour mixture, then in the beaten egg, then in the bread crumb mixture. equal parts chicken broth and coconut milk (I usually use a can of coconut milk and then fill it up with broth)
lots of fresh chopped ginger
celtic sea salt
fresh ground black pepper
crispy slivered almonds, optional
If I have cooked rice on hand, I will heat it and use this chicken mixture over it. If I don't have rice, I'll add my crispy slivered almonds to the recipe for some added texture. Of course, the longer this recipe is cooked, the more the ginger is permeated into the sauce and chicken, but it's also good when made quickly and only simmered 15 minutes or so. I hope you try it and enjoy it. It's quite tasty! A green salad goes well with this and can be made while the chicken is heating. | Feb 11, 2006 | Title : Lentil Coconut Curry Stew (1) | | | | ? | Coconut | 1 cup lentils, soaked overnight

1 cup soaked flax seeds, soaked 10 hours in 2 cups water
2 cups NT crispy nuts and seeds.
I like to use combinations of almonds, pumpkin seeds, sunflower seeds, and sesame seeds.
2 cups vegetable pulse.
If you juice this is a great opportunity to use up the pulp, just make sure to chop up any big chunks or long strings. Otherwise food process the vegetables to a fine consistency and squeeze out juice. Use carrots, beets, zucchini, onions, celery, peppers and/or tomato.
3-4 T dry herbs—garlic powder, oregano, basil, pepper
1 T sea salt or more to taste
Process the flax seeds in a food processor until they form a goopy mixture. Process the nuts and seeds until finely chopped. Mix all ingredients together in a large bowl. Spread ¼ inch thick on parchment paper covered dehydrator trays. Uses about 4 trays. Dehydrate for 8 hours, flip and pull off paper. Dehydrate for an additional 8 hours.
