Animal fats, properly prepared whole grains, enzyme-enriched foods and nourishing bone broths kept our ancestors healthy. Sally Fallon, author of Nourishing Traditions, explains why these are vital factors for maintaining good health today.

2:00-4:00 Mark McAfee: Mending the Broken Food Chain with Mother Nature’s Blue Print

Family farms can create value added products while providing consumers with health empowerment. Topics will include raw milk production and current struggles of the raw revolution. Mark is operator of Organic Pastures Dairy Company in Fresno California. He also is extremely active in political efforts to ensure American’s rights to choose their food and speaks nationally.

4:15–5:30 Sally Fallon: Breakfast, Lunch, and Dinner

This session will provide suggestions for no-fuss, economical meals. Includes three economical one-week menu plans with instructions and cooking tips. The principles of traditional diets make practical.

A. The Triad of Immunity:

Strong immunity is the cornerstone to health. Mark Anderson will go into detail on calcium, vitamin C complex, and vitamin F complex, which Weston Price's coined the X factor, in sickness and in health. Mark is an educator, author of Empty Harvest, and a Standard Process West executive.

B. Using Coconut in Everyday Life:

Coconut oil is quickly becoming one of the healthiest oils to consume. Learn how to put this oil to use in the most practical places, like for kids, during colds, etc. Dr. Bruce Fife, C.N., N.D. has written 18 books including Coconut Miracle and Saturated Fat May Save Your Life. He is a leading coconut researcher.

C. Natural vs. Synthetic Nutrition:

Donna Wild will dive into how vitamins found in whole foods differ from synthetic vitamins found in supplements. She will also discuss the foods these vitamins are found in and their function in the body. Donna Wild has studied, practiced, and taught herbal and natural nutritional health approaches for 19 years. As a technical consultant for doctors, she works for Standard Process West.

D. Eat Fat Lose Fat:

Sally Fallon will demonstrate how to use the power of coconut oil and traditional foods to help you achieve your ideal weight without feeling tired or hungry. Topics include scientific studies on the benefits of coconut oil for weight loss; the benefits of high-fat diets for weight loss; determining your ideal weight; and hidden things in the food supply that make you gain weight.

E. Choose Your Dairy Wisely:

Mark McAfee will go through the standards every raw milk dairy farmer should be upholding to produce the safest, cleanest, and most nutrient-dense milk possible. How can the consumer screen their own dairy farmer? What bacteria should one be aware of? Anyone interested in or currently drinking raw milk will gain insight from this practical talk on how to best choose your raw dairy farmer.

F. Building Bridges and Sowing Seeds:

Open your eyes to the world of produce and seeds. Shanan Olson & Richard Pecoraro of Abbondanza Organic Seeds & Produce will share the importance of choosing beyond organic. Learn responsibility in creating and maintaining diverse, local food systems. Learn how to develop loyal relationships with your food sources and gain insights of production cycles and food handling. We’ll also discuss Community Supported Agriculture and Bioregional philosophies of food networking.

G. Fermentation Made Simple:

This team-effort session will give you the ground work for fermenting all kinds of veggies and fruits. Delicia Beaty and Sharon Foutch will give you the practical tips they have learned over the years so you can avoid common mishaps.

 

H. Feeding Kids from Birth to Teens:

Children are our heritage! We want to help them grow strong and well-nourished. What are the best choices you and your children of all ages can make even when confronted with conventional food options? How can you make your meals kid-friendly? Join Jen Allbritton, CN and Ellie Dickson to learn how to optimally support the health of your kids with unique ideas and recipes.
